I have a microsoft action pack version of server 2016
My licence key doesn't work with your version, so i have to install my version of 2016 standard

I've got the ISO file, How do i make it into a usable .gz file? 
Alternatively it would be much easier if i can create a .gz from one of my existing servers which is already setup, is that possible? if so please can you give me some pointers to get going?

Unfortunately, we do not have a guide at this time, however, we do have plans to create one when time permits.

In short, the templates we use in our tutorials were created by installing Microsoft Windows inside a virtual machine and then creating an image which is then installed onto the various systems.
